It is generally accepted that eggplant contains a large amount of bitterness, which must be removed from the fruit, otherwise the dish will be spoiled. This effect creates solanine - a substance that can be removed with the help of salt and water. When preparing a dish of eggplant, the first thing to do is to peel the fruits (in the case of young fruits this stage can be avoided), cut into pieces, sprinkle them with salt and leave for 30-40 minutes, then rinse with running water.
When cooking with eggplant, the meat is washed, twisted into minced meat or cut into pieces. Violet fruits "love" spicy herbs, the combination with thyme and basil is ideal, so you should stock up on spices in advance. You can add sour cream or cream to the minced meat.
Recipe 1: Stewed Eggplant with Vegetables and Meat
